Seared Spiced Wahoo!

     Fresh Wahoo is one of my all time favorite fish to eat. We catch it so rarely out of Sebastian Inlet that when we get one it is a real treat!  The main thing to avoid with Wahoo is that you don't want to over cook it.  It can get dried out very easily and it becomes unappetizing.  The best way to avoid overcooking is by searing it.  I like it completely rare on the inside but you can cook it close to medium and it will still be delicious.  It doesn't get any more simple than this.





Thick cut Wahoo Filets


Cayenne pepper


Coconut oil

Soy Sauce



We are gonna start this by putting just enough coconut oil in a pan to cover the bottom and turning on high heat.  While that is heating up we are going to lightly dust the wahoo filets with cayenne pepper, paprika and salt. Once the oil is on the verge of smoking Place the fish and watch carefully to make sure its not being over cooked. It should only take 30 seconds to a minute per side. Place in the Fridge for 20 minutes and let it chill. This allows the fish to be sliced without the outer crust crumbling apart. With your sharpest non serrated knife cut thin slices of the filet and arrange on your plate. Serve with wasabi and soy sauce.
